If there is one thing we all need to get us through the "Sunday Scaries", it is some comfort. And what better comfort is there than a big bowl of warm and gooey mac and cheese?


This creamy, dreamy slow cooker mac and cheese is the kind of recipe that warms your soul. Besides the tastebud delight this dish has, it is also one of those recipes you can set and forget. This is super helpful when you are feeling the Sunday rush and have a lot to do to prepare for the week ahead.


So, grab your slow cooker, and let's dive into this timeless, oh-so-cheesy goodness!

The Sunday Cookbook:

Slow Cooker Mac & Cheese

 

Ingredients

For Regular Mac and Cheese:

  • 1 box (16 OZ) elbow macaroni, cooked

  • Cooking spray or oil

  • ½ stick (about 4 tablespoons) of butter, cubed

  • 1 ½ cups of milk

  • 3 cups cheddar cheese, shredded

  • 1 cup parmesan cheese, grated - plus extra for garnish

  • 1 cup mozzarella cheese, shredded

  • 1 teaspoon sea salt

  • ½ teaspoon pepper

  • Diced chives, for garnish - optional


For Dairy-Free and Gluten-Free Mac and Cheese:

  • 1 box (16 OZ) gluten-free elbow macaroni, cooked

  • Cooking spray or oil

  • 4 tablespoons of dairy-free butter or palm shortening

  • 1 ½ cups of dairy-free milk

  • 4 cups dairy-free cheese, shredded

  • ½ cup nutritional yeast

  • 1 teaspoon sea salt

  • ½ teaspoon pepper

  • Diced chives, for garnish - optional



Directions

  1. Cook the macaroni as directed on the package for al dente. Drain the pot and set aside.

  2. Spray the slow cooker with cooking spray or lightly brush the surface with oil.

  3. Add in the cooked macaroni and butter. Stir until the butter is melted.

  4. Add the milk, the different cheeses, and spices to the macaroni and mix until distributed evenly.

  5. Place the cover on the slow cooker and set to cook for 3 hours on low. Stir the mixture at the halfway point, but avoid uncovering the slow cooker beyond that.

  6. When the timer is done, stir well and sprinkle extra parmesan and/or chives on top for garnish. Serve hot.
