This is the best combo of sweet and savory! Our sticky pineapple rice recipe is quick and super easy to make.


Tropical, sweet, and delicious. That’s what this sticky pineapple rice is all about! Try pairing it with our Honey Garlic Salmon, Honey Glazed Chicken, or Laura's Lentil Chickpea Burger for a tasty summer meal!

Tips and Variations:


  • Switch the 1 cup water & 1 cup pineapple juice in the recipe for 2 cups of your favorite Kettle & Fire Bone Broth (we use Classic Beef Bone Broth). This change goes well if you are using fresh pineapples, instead of pineapples from a can.

  • We made this recipe recently and decided to add in diced ham using Applegate's Slow Cooked Uncured Ham slices. It was like a Hawaiian pizza in a bowl, minus the cheese and pizza crust 😄



Sticky Pineapple Rice

 

Ingredients

  • 1 cup water

  • 1 cup pineapple juice

  • 1 cup diced pineapples, fresh or from a can

  • 1 tablespoon unsalted butter or palm shortening

  • ½ teaspoon sea salt

  • 2 cups rice, cooked (leftover plain rice works best!)

  • juice of half a lime

  • chopped fresh cilantro

Directions

  1. Add all ingredients up to sea salt in a saucepan or wok. Let cook over a medium flame until the liquid begins to boil.

  2. Add in the rice and allow it to cook for another 15 minutes or until it absorbs all the liquid while stirring occasionally.

  3. Remove pan from heat and let sit for 5 minutes. Then fluff rice with a fork.

  4. Drizzle with lime juice and top with chopped cilantro before serving.
