I am really into oat flour. It is so easy and makes everything you put it in instantly moist and flavorful. Oat flour is featured in our banana bread recipe and is now the star of these healthy Blueberry Banana Bread Bites. It is so irrestible that Momma Mac has become obsessed with this recipe.
When our bananas start getting ripe, Joe knows to leave them behind for me to make banana bread. One day, decided I didn't want to make a loaf and instead turned the recipe into bite-size versions. Hence the name "Blueberry Banana Bread Bites".

These muffins are made with no refined sugar - I use date sugar and maple syrup as a sweetner. They get majority of their sweetness thanks to the ripened bananas.
Of course, what is a muffin without some fruit. For us, blueberries are our favorite berry to add to muffins. The way they bake into the batter and create such a jam-like texture throughout.

Blueberry Banana Bread Bites
Ingredients
¾ cup oat flour
½ cup almond flour
1 teaspoon baking soda
1 teaspoon of sea salt
¼ cup date sugar
1 teaspoon cinnamon
⅓ cup maple syrup
1 egg
¾ cup of milk
2 ripe bananas
¾ cup of blueberries
⅓ cup almond butter or SunButter
Directions:
Preheat oven to 375° F.
In a bowl or stand mixer, combine the dry ingredients: flours, baking soda, sea salt, date sugar, and cinnamon.
Add in the wet ingredients: maple syrup, egg, and milk. Mix until combined.
Slice up the ripe bananas and add to the batter. Mix until the bananas are well combined, but still chunky in the batter.
Using a rubber spatula, fold in the blueberries, carefully.
Fill the cupcake pan and cook for 20 minutes.
Remove and let cool on a wire rack.
Once cool, drizzle almond butter, SunButter, or your favorite nut spread on top. If needed, loosen the spread by whisking in water.
