When talking about baking, I always compare it to being a science experiment and your ingredients are the chemical compounds you are mixing together to create something new. Baking without gluten and various other ingredients is a whole other level of science experiments. Your process may change entirely depending on what you are making, bringing a whole new repertoire of ingredients.

What blends do you purchase?
While there are several pre-packaged gluten-free flour blends available in stores, most of them I cannot use due to my allergies to coconut, corn, and nightshades. Luckily, I did find two flour blends that fit into my dietary restrictions.
There was an Enjoy Life Foods flour mix that was the first and only store-bought all-purpose flour I was able to find that I could have. Unfortunately, as the story goes, a lot of food allergy products often get discontinued due to a lack of sales or demand. This is the sad truth when specialty products are no longer finding it to be cost-efficient to continue to produce some of their products, which is what happened to this mix.
As I went back on my search, I realized two trusted brands of mine started selling their own flour mix. While they are not store-bought, they are available online and 100% worth it!

Otto's Cassava Flour & Baking Powder
Otto's is a brand we really love in our household. Their mission is to bring families challenged by food allergies, intolerances, and differing food lifestyles all back to the table together. Their cassava flour is a simple swap for most baking and cooking recipes, substituting 1 cup (120 grams) of all-purpose flour for 3/4 cup (120 grams) of their cassava flour. Additionally, they have corn-free baking powder, as well as cookie and brownie mixes that are great, especially for baking in a pinch. I also absolutely adore the recipes tab featured on their website. So far, my personal favorites are their Easy Grain-Free Tortillas and their Gluten-Free Crunchy French Bread.

Make your own gluten-free flour blend!
By creating your own blend, you can adjust the ratios of different flours to achieve the desired texture and flavor for your specific recipes. Additionally, making your own blend can be more economical, as purchasing individual gluten-free flours in bulk is often more affordable than buying pre-packaged blends.
Here's a basic recipe to get you started on making your homemade gluten-free flour blend. Feel free to experiment and adapt the ratios to suit your personal preferences and specific recipes.

Homemade All-Purpose Gluten-Free Flour Blend
Ingredients
1 cup brown rice flour
1 cup white rice flour
1 cup cassava flour
1 ½ cup arrowroot starch
½ cup buckwheat flour
½ cup millet flour or sorghum flour
3 tablespoons brown rice protein
Directions
In a large mixing bowl., combine all the ingredients. Thoroughly whisk the flours together until well combined, ensuring an even distribution of the different flours throughout the blend.
Transfer the mixture to an airtight container or a sealable bag.
Shake or stir the blend again before each use to ensure the flours are evenly incorporated.
Tips:
Storage: Store your all-purpose gluten-free flour blend in a cool, dry place, such as a pantry or cupboard. It should stay fresh for several months.
Customization: Feel free to experiment with different flours to suit your preferences and dietary needs. Some alternative flour to consider include chickpea flour, almond flour, or potato starch. Adjust the ratios accordingly to achieve the desired texture and flavor.
Xanthan or Guar Gum: Depending on the recipe, you may need to add a small amount of xanthan gum or guar gum (about ½ to 1 teaspoon per cup of flour blend) to improve the binding and texture of your baked goods.
