Sunbutter and Blueberry Jelly Muffins

  1. Preheat oven to 375° F. Oil a muffin pan and set aside.

  2. In a mixing bowl, combine the dry ingredients: oat flour, all-purpose flour, rolled oats, baking soda, sea salt, date sugar, and cinnamon. Mix with a whisk and set aside.

  3. In a stand mixer or separate mixing bowl with an electric hand mixer, combine the honey, Sunbutter, and chia seeds. Add in eggs and mix again.

  4. While mixing, slowly add in the dry ingredients and stir until combined. After, fold in the chocolate chips, dates, and berries.

  5. Evenly disturb in the muffin pan and place on the center rack in the oven. Cook for 15 to 20 minutes.

  6. Remove from the oven and let cool in the pan for 5 minutes before taking each muffin out. Let the muffins fully cool on a wire rack.
