These homemade dairy-free chocolate cups are the perfect Valentine's Day treat, that can be made with the nut butter or non-nut butter of your choosing!

Joe and I have a sweet history, much like chocolate itself. When we were engaged and working in the same office, we loved surprising each other with little gifts. One Valentine's Day, our office held a candy gram fundraiser for the American Heart Association. While it was a fun idea, I realized I wouldn't be able to enjoy most of the candy due to my food allergies. Joe, ever thoughtful, came to the rescue with a special surprise: homemade Chocolate Sunbutter Cups! Along with flowers (and a hilarious cookie with his face on it!), these treats made my Valentine's Day. Now, I'm sharing the recipe so you can make these allergy-friendly delights for your own Valentine.

Making these was a lot easier than I thought it would be. For one, it is three ingredients: Enjoy Life chocolate chips, Sunbutter (or nut butter of your choosing), and corn-free powdered sugar (which can be omitted).
They are free from the top 8 food allergens (milk, eggs, peanuts, tree nuts, wheat, soy, fish, and shellfish), as well as free from corn, coconut, nightshades, and mushrooms. Each cup is about 2 tablespoons and you can easily adjust the amount of ingredients to make larger or smaller batches.
Additionally, the shapes is all up to you. You can go classic and use a small cupcake pan to make classic-style "Reese's" cups, or get seasonal with shaped chocolate molds.

Chocolate Sunbutter Cups
Send love, not allergens this Valentine’s Day!
Ingredients
3 cups Enjoy Life's Chocolate Chips, any variety of your choice
½ cup Sunbutter, or nut butter of choice
1 teaspoon powdered sugar
Directions
Using a double broiler, melt 1½ cups of chocolate chips.
Spoon the melted chocolate into your mini cupcake pan or chocolate molds, enough to cover the bottom and create a base for your chocolate cups. Once covered, place in the refrigerator for about 5 minutes, or until they are cooled and set.
Meanwhile, mix the Sunbutter and powdered sugar together in a small saucepan on the stove for one minute over a low flame. Be sure not to cook for too long or you will burn the mix.
Take the chocolate out of the fridge and place a small dollop of the Sunbutter mixture in the center of the cups.
Melt the remaining chocolate chips in the double broiler and cover the Sunbutter dollops with the melted chocolate.
Place back in the fridge for one last final set.
Remove from the molds and enjoy!
