Make Valentine's Day chocolates that are safe for food allergies! These Chocolate Sunbutter Cups are the perfect dessert for your Valentine foodie with food allergies.


Joe and I are like chocolate; we have a rich history. Back when we were an engaged couple, working in the same office, and not yet living under the same roof, we would often like to surprise each other with cute whatnots at our desk's on different occasions. Whether it was balloons for our birthdays, flowers for our anniversary, or just leaving surprised of homemade baked goodies. One gesture that really stuck out for me was Joe's Valentine's Day surprise.


During this year, our job was having a candy gram, where people could purchase candy to send to their colleagues for Valentine's Day and the money raised would be donated to the American Heart Association. It was such a fun idea and I was so excited to purchase grams for my fellow co-workers, that I totally didn't think about the fact that I would be getting all this candy I wouldn't be able to eat. Luckily, Joe realized and planned for it.


I arrived to work that day, finding a small vase of flowers and a baggy of these adorable heart-shaped chocolate Sunbutter cups left on my desk from Joe. Just in case I didn't know they were from him, there was also a cookie with his face on it. 😆



Even as thoughtful as this little treat was, it meant even more to me to have him go out of this way to make homemade chocolates I can have, which allowed me to snack on candies with everyone when the candy grams were given out. Plus, they were so good, it is now something we make every Valentine's Day, or whenever we are feeling in the mood for them for chocolate cups.

Making these were a lot easier than I thought it would be. For one, it is three ingredients: Enjoy Life chocolate chips, Sunbutter (or a nut butter of your choosing) and corn-free powered sugar (which can be omitted).


They are free from the top 8 food allergens (milk, eggs, peanuts, tree nuts, wheat, soy, fish, and shellfish), as well as free from corn, coconut, nightshades, and mushrooms. Each cup is about 2 tablespoons and you can easily adjust the amount of ingredients to make larger or smaller batches.


Additionally, the shapes is all up to you. You can go classic and use a small cupcake pan to make classic-style "Reese's" cups, or get seasonal with shaped chocolate molds.

Chocolate Sunbutter Cups

Send love, not allergens this Valentine’s Day!

 

Ingredients




Directions

  1. Using a double broiler, melt 1½ cups of chocolate chips.

  2. Spoon the melted chocolate into your mini cupcake pan or chocolate molds, enough to cover the bottom and create a base for your chocolate cups. Once covered, place in the refrigerator for about 5 minutes, or until they are cooled and set.

  3. Meanwhile, mix the Sunbutter and powdered sugar together in a small saucepan on the stove for one minute over a low flame. Be sure not to cook for too long or you will burn the mix.

  4. Take the chocolate out of the fridge and place a small dollop of the Sunbutter mixture in the center of the cups.

  5. Melt the remaining chocolate chips in the double broiler and cover the Sunbutter dollops with the melted chocolate.

  6. Place back in the fridge for one last final set.

  7. Remove from the molds and enjoy!
